Guacamole Bread

Ingredients

  • 350g water
  • 80g active starter
  • 520g bread flour
  • 8g salt
  • 1 tsp red pepper flakes
  • 2 Tbs dried cilantro
  • 75g fresh jalapeños sliced
  • 75g sun-dried tomatoes in oil
  • 40g oil from sun-dried tomato jar
  • 1 large avocado diced and mixed with juice of 1 lime

Instructions

  1. In a large bowl, mix together the water, starter, bread flour, salt, red pepper flakes, dried cilantro, jalapeño slices, sun-dried tomatoes, and sun-dried tomato oil.
  2. Cover the bowl and let the dough rest for 1 hour.
  3. Perform the first set of 25 stretch and folds, cover the bowl, and let it rest for 30 minutes.
  4. Perform the second set of 6-8 stretch and folds, cover the bowl, and let it rest for another 30 minutes.
  5. In a separate bowl, mix together the diced avocado and lime juice.
  6. Dump the dough onto a damp counter and stretch it out into a rectangle to laminate in the avocado chunks. Spread them evenly on your dough and fold it into thirds and roll it up. Place it back in the bowl and cover.

  7. Let the dough bulk prove for 8-10 hours or until doubled in size.
  8. Butter or line a loaf tin with parchment paper.
  9. Roll out the dough on a floured counter and roll it up. Place it in the prepared tin, cover, and let it prove again for 1-2 hours.

  10. Preheat your oven to 375°F (190°C).
  11. Place the loaf tin in the oven and bake for 30 minutes. Check at that time to see if you need to place a tin foil tent to prevent overcooking the top of the bread.
  12. Continue baking for another 20 minutes.
  13. Take the bread out of the oven and let it cool for 5-10 minutes.
  14. Remove from the tin and cool on a wire rack for 1-2 hours.
