Ingredients
- 350g water
- 80g active starter
- 520g bread flour
- 8g salt
- 1 tsp red pepper flakes
- 2 Tbs dried cilantro
- 75g fresh jalapeños sliced
- 75g sun-dried tomatoes in oil
- 40g oil from sun-dried tomato jar
- 1 large avocado diced and mixed with juice of 1 lime
Instructions
- In a large bowl, mix together the water, starter, bread flour, salt, red pepper flakes, dried cilantro, jalapeño slices, sun-dried tomatoes, and sun-dried tomato oil.
- Cover the bowl and let the dough rest for 1 hour.
- Perform the first set of 25 stretch and folds, cover the bowl, and let it rest for 30 minutes.
- Perform the second set of 6-8 stretch and folds, cover the bowl, and let it rest for another 30 minutes.
- In a separate bowl, mix together the diced avocado and lime juice.
